Spicy Salmon with sweet potato chips

Protein, complex carbs and greens. What more do you need from your food?
Try this delicious recipe to fuel your body during a tough week of training.

Ingredients:
4 Sweet potatos
4 Salmon fillets
Mixed salad
Spinach
Cucumber
Tomato

Serves 4


Directions:
1. Peel sweet potatos and cut into long pieces
2. Place potatos into boiling water for 5-7 minutes


3. Drain potatos and place onto a baking tray. Pre heat the oven to 180 degrees C
4. Season potatos with salt and pepper and drizzle with 2 tablespoons of extra virgin olive oil
5. Toss potatos thoroughly and place into oven - initally for 15 minutes 
6. Season salmon with salt and pepper and add chilli flakes



7. Remove potatos from oven and toss then return to oven for a further 20 minutes
8. Place salmon in the oven for 15 - 20 minutes
9. Prepare salad by chopping salad ingredients and placing into a large bowl
10 Add salt and pepper and 1 tablespoon of olive oil. Mix well
11. Serve and enjoy

Zesty lemon chicken recipe





Ingredients (serves 4):
4 boneless, skinless chicken breasts
6 lemons
65g plain flour
1 teaspoon paprika
½ teaspoon ground black pepper
1 teaspoon extra virgin olive oil
30ml water
1 ½ tablespoon brown sugar
Pinch of salt and pepper to season
Steamed brown rice to serve




Directions
1.      Halve the lemons and squeeze all the juice, except 1 half, into a large bowl.  Add  the chicken to the bowl, cover with cling film and place in the fridge for 30 minutes – 2 hours.
2.      Preheat oven to 190 degrees C.
3.      In a small dish, mix the four, paprika and ground pepper.
4.      Lightly coat each chicken breast in the flour mix.
5.      In a non-stick frying pan, heat the olive oil on a medium heat.
6.      Add the chicken and brown for 2 minutes each side.
7.      Remove the chicken and place in an oven dish.
8.      Add the water and sprinkle the brown sugar over the chicken in the oven dish.
9.      Thinly slice the remaining half of the lemon and place on top of the chicken breasts.
10.  Season with salt and pepper.
11.  Bake for 45 minutes.
12.  Serve with steamed boiled rice.

Spicy mexican chicken soup - plus a food freebie!

Try this delicious Spicy Mexican chicken soup which is high in protein and low in calories

Ingredients:
4 skinless chicken breasts - cut into strips
2 cloves of garlic
1 small chopped onion
1 diced jalapeno
1 tbsp canola oil
460ml of mild salsa
1.2 litres of chicken broth

Method:
1. Heat canola oil over medium heat in large pan
2. Add chopped onion and diced jalapeno
3. Cook until soft and tender and then add garlic
4. Cook for further 30 seconds
5. Pour in chicken broth and bring to boil
6. Add chicken breasts and cook until white
7. Mix in salsa and reduce to a simmer 
8. Season with salt and pepper
